Antburgueses / Antburgers (Tutorial)

No sóc massa aficionada a utilitzar el congelador (pel meu gust, quant més fresc el producte, millor); de fet fins fa algunes setmanes / mesos, no li havia donat més ús que el de mantenir el pa de sopes, algun congelat esporàdic (garrofó és l'únic que em ve al cap) i el gel. Però darrerament congelar fruita trossejada per fer gelats o afegir als berenars m'ha resultat molt pràctic. I ha coincidit amb què volia buidar rebost i quina millor idea que fer baixar les provisions d'arròs i llenties a base d'hamburgueses (a partir d'ara anomenades Antburgueses perquè les faig jo, Ant). I ja que hi som, queda per la posteritat un tutorial per aquell interessat en submergir-se en el món de les "hamburgueses" vegetals.

El procediment és molt senzill: 
a) coure les llenties i l'arròs
b) en ser ben cuits dividir la mescla en tantes parts com versions d'antburgueses es desitgin fer
c) afegir els diferents condiments a cada porció i fer les hamburgueses

Les que més m'han agradat han estat les de Garam Masala (m'al·lucina aquesta mescla d'espècies) i les de llevat de cervesa (el conjunt amb l'all, l'asafètida i el llevat li dóna un regust aformatjat impressionant).

I'm not too keen on using the freezer (to my taste, the fresher the product, the better); in fact it wasn't until some weeks/months ago that all I ever did was use it to keep the sliced bread, some random frozen item (lima beans are the only thing that comes to mind right now) and ice. But as I lately have been freezing chopped fruit to turn it into ice cream or pour it over breakfast, it has become quite practical. And it happened to meet the time in which I intended to empty my pantry, and what a better way to lower the supplies of rice and lentils than transforming them into burgers (from now on, called Antburgers as I am doing them myself, Ant). And since we're at it, this remains as a tutorial for those interested in diving into the world of veggie burgers.

The procedure is quite simple:
a) cook lentils and rice
b) once well cooked, divide into as many different types of burgers we want to make
c) add the complementary ingredients into each portion and make the burgers

The ones I enjoyed the most are the Garam Masala ones (this spice blend blows my mind) and the nutritional yeast ones (the mix with garlic, asafetida and nutritional yeast provides an amazing strong cheesy flavor).

Antburgueses / Antburgers (Tutorial)

INGREDIENTS

(per 26 antburgueses / serves 26 antburgers)

2 tasses d'arròs basmati integral / cups brown basmati rice
1 tassa de llenties "pardines" / cup brown lentils
1 tassa de llenties vermelles / cup red split lentils
Sal / salt
Pebre / black pepper
Farina d'arròs / rice flour


INGREDIENTS CONDIMENTS

· Antburgueses I
1 cullerada espècies Garam Masala / Tbsp Garam Masala spice blend
1/2 Pastanaga ratllada / schredded carrot


· Antburgueses II
6 olives negres / black olives
2 cullerades de flocs de civada / Tbsp rolled oats
Pebre bord / Paprika
 

· Antburgueses III
Pipes de carabassa / Pumpking seeds
All en pols / garlic powder
Llevat de cervesa / nutritional yeast
1 punteta d'asafètida / tiny pinch asafetida
 

· Antburgueses IV
Romaní / rosemary
1/2 pastanaga ratllada / schredded carrot
Sèsam / sesame
1/2 cullerada pasta de tomàtiga / Tbsp tomato paste


- Dins una olla prou gran posar a coure l'arròs i els dos tipus de llenties amb aigua suficient.

- En ser ben cuits, afegir sal i pebre, deixar refredar una mica, esclafar una mica amb una forqueta i dividir en 4 porcions diferents.

- Afegir a cada porció els ingredients desitjats al gust. Alerta amb les espècies! Més val començar poc a poc, que posar-n'hi massa des del principi i que resulti incomestible. Sobretot amb el Garam Masala i l'asafètida (d'aquesta darrera el màxim que es pot utilitzar és una punteta, ja que té un gust MOLT fort, i un tant fètid, tot sigui dit).

- Formar les hamburgueses, enfarinar-les i fer el que es cregui necessari amb elles: menjar-les (passant-les per la paella o el forn abans, clar), congelar-les, dur-ne la meitat al veïnat, etc. En el meu cas, com he explicat abans, he optat per congelar-les.

- In a large pot, bring to boil the rice and the two types of lentils with enough water.

- Once they're cooked enough, add salt and pepper, let cool for a while, mash with a fork and divide into 4 portions.

- Add ingredients to taste to each portion. Beware the spices! It's better to start off by adding just a little bit, rather than overdosing from start and making it inedible. Especially Garam Masala and asafetida (the latter should be used very carefully, at most just a pinch of it, as the flavor is VERY strong, and somehow fetid, I must add).

- Shape the burgers, coat them with rice flour and do whatever you should with them: eat them right away (after panfrying or cooking in the oven), freeze them, bring half of them to your neighbor, etc. In my case, as mentioned above, I went for the freezing.

Sopes mallorquines d'estiu / Summer majorcan vegetable stew

La cuina mallorquina compta amb molts de plats que de per sí són vegetarians, i molts d'altres on els productes animals són fàcilment substituïbles (o senzillament omissibles). I les sopes d'estiu (i les d'hivern també...) en són un dels meus exemples predilectes. Les sopes mallorquines més populars són les d'hivern, fetes a partir dels vegetals corresponents a aquesta època: espinacs, bledes, colflori, col, etc, els quals es couen fins quedar tendres i es serveixen sobre el pa moreno llescat ben fi a capes dins una greixonera. Les d'estiu (també anomenades "solleriques", almenys a casa nostra), per la seva banda, aprofiten les mateixes verdures amb que es fa, per exemple, el trempó. És un plat molt senzill de preparar, els més complicat és trobar el pa llescat si ens trobam fora de Mallorca.

Ingredients presents a la gelera: tomàtigues ben madures, pebres verds (tipus blanc mallorquí), cebes blanques al rebost... ja he menjat prou trempó aquests dies passats, ara toca donar-los un altre ús a aquestes verdures tan de temporada (i que tan bé combinen entre elles!). Així doncs, he decidit fer unes sopes mallorquines d'estiu.

It's very easy to find vegetarian dishes among the cuisine of Mallorca, and often animal products are easily replaceable (or even just dispensable). And today's summer stew (and also winter's...) are one of my favorite examples. The most popular "sopes mallorquines" are the winter one, prepared out of season vegetables: spinach, swiss chard, cawliflower, cabbage, etc, which are simmered until tender and then served over thinly sliced brown bread layered in a clay pot. The summer ones (also called "solleriques"
at our home, "from Sóller", a wonderful town in a valley) use up the same vegetables as trempó (typical summer salad of tomato, onion and green pepper). It's a very easy dish, the hardest part could be getting a hold of the sliced bread when one's out of Mallorca.

Food found in the fridge: ripe tomatoes, green peppers (white majorcan sort), onions in the pantry... I've already had enough trempó these past days, now it's time to give these seasonal veggies another purpose (and they match so well with eachother!). So here I decided to make some summer "sopes mallorquines".

Sopes mallorquines d'estiu / Summer majorcan vegetable stew

INGREDIENTS

1 ceba / onion
2 pebre verd (tipus blanc) / green pepper ("white" type)
3 tomàtigues / tomatoes
Alls / garlic cloves
Oli d'oliva / olive oil
Pebre bord / paprika
Sal / salt
Aigua / water
Pa de sopes / thinly sliced brown bread

- Tallar la ceba al llarg i els alls a làmines. Dins una greixonera (si no en tenim, una olla va bé) començar a daurar-los amb un bon raig d'oli.

- Tallar les tomàtigues a trossos mitjancers, i el mateix amb els pebres (m'han contat que és millor tallar-los amb les mans que amb el ganivet...).

- Quan la ceba es comenci a daurar, afegir-hi la tomàtiga trossejada i deixar-la sofregir uns minuts mentre comença a amollar aigua.

- Afegir-hi els pebres tallats, mig tassó d'aigua i deixar coure tapat tot plegat durant 15 minuts.

- Tastar de sal i afegir-hi pebre bord al gust. Deixar coure fins que la ceba i el pebre siguin ben tendres.

- Dins una greixonera (o recipient, per exemple, de vidre) cobrir el fins amb el pa llescat. Abocar-hi les verdures i el brou suficient perquè l'absorbeixi el pa i no quedin les sopes brouoses.

- Slice the onion lenghtwise and so the garlic cloves. In a clay pot (or a regular pot), sauté them with two tablespoons of olive oil.

- Chop the tomatoes into medium size chunks, and the same with the peppers (I've been told it's better to do so by hand rather than using a knife...).

- Once the onion begins to golden, add the chopped tomatoes and fry lightly for some minutes as it releases some water.

- Add the chopped peppers and half a glass of water and let simmer covered for about 15 minutes.

- Salt and sprinkle paprika to taste. Let cook at low-medium heat until the onion and pepper are tender.

- Layer some bread slices at the bottom of a glas or clay container until the bottom is covered. Pour the vegetables and enough liquid so that the bread absorbs the broth and gets soaked but the whole stew remains dry.
